Minty Cooper
INGREDIENTS
- 1 oz Simple syrup
- 2 slices of cucumber
- 2-3 mint leaves
- 2 oz Penelope Bourbon
- Tonic for topping
In a cocktail shaker, muddle simple syrup, cucumber and mint. Add Penelope bourbon and fill with ice. Shake about 30 seconds or until well chilled. Pour into a glass (coupe or old fashioned) then top with tonic. Could also be served over crushed ice like a mint julep. Garnish with fresh mint and cucumber slices.
