Penelope Bourbon Glazed Ham

INGREDIENTS

1 Cup of Penelope Bourbon
1 Ham
1 Cup Pineapple Juice
½  Cup Maple Syrup
2 Tablespoons of Ground Mustard
1 Spring of Fresh Thyme

Directions

1. Preheat the oven to 375 degrees F. Trim the ham skin, leaving the fat intact. Slice the fat into a 1 inch by 1 inch crosshatch pattern. Put the ham flat-side down in a roasting pan; add 1 cup water and ½ cup of Penelope Bourbon. Bake on the lowest oven rack for 45 minutes, adding more water if the pan gets dry.

2. While the ham is baking, In a medium pan, combine Penelope Bourbon“, maple syrup, ground mustard and thyme. Simmer the mixture until it becomes fairly thick. Stir frequently to avoid burning.

3. Remove the ham and generously coat with the Penelope Bourbon Glaze. Cover loosely with tin foil and bake for an additional 40 more minutes. After 40 minutes, remove the tin foil and with the remaining glaze.  Bake uncovered until the glaze if browned (40-50 minutes. Let rest 15 minutes before carving.
